This picture has been doing the rounds from last week and some of you had asked me for its recipe. Here it is!! Orange Almond Yogurt Loaf which i baked to celebrate my blog's first birthday last week. This cake is adapted from the HummingBird Bakery's Cake Days book. (You must definitely consider getting it if you love baking cakes, every single recipe in it is fool proof ). Almost everyone i know loves citrus flavored cakes, so after my Lemon Pound Cake, here is something with Orange. Almonds and Oranges are a to die for combination. Ever bite of this cake had an amazing orange flavor and the nuttiness of almonds. Rakesh finished almost the entire loaf with his evening tea.(Of course, not in a single day).
Oh, mean while, all my Malayali friends out there, in just 2 weeks there is Onam, how are the preparations going on? We will probably have a potluck and so i guess i will have to make just about 3-4 items. I will keep you all updated with the happenings about it in coming days. For now, let's get baking!!
Add 2 eggs, 1 tsp vanilla extract and either whisk them with hands or electric mixer till fluffy.
Add around 1/2 a cup of almond meal (powdered almonds,either store bought or home made).
Add 1 cup of all purpose flour, 1 tsp baking powder and 1 tsp of baking soda and mix well till combined.
Add around 1/4th cup of plain yogurt.
I added some orange juice freshly squeezed even though the original recipe doesn't call for it. I love oranges, so the more the merrier!!
Grease a baking loaf with butter and dust with flour. Pour the batter and layer some almonds on top. Bake in your preheated oven for around 50-60 minutes or when the tooth pick test is all cleared.
This cake stays fresh for 3-4 days at room temperature and 1 week when refrigerated. Mine was finished in 3 days flat.

ReplyDeleteHi can we substitute mango with orange. What additional ingredients do we need to add in and the measurements if this can be substituted with mango
ReplyDeleteI cannot comment on that since i haven't tried it. Mango cake would be a different cake altogether.
