Happy Holidays Everyone! With Christmas just 2 days away, are you guys all set with the holiday preparations? Sorry for a no show from my end for couple of weeks, i fell sick very badly and could hardly manage anything well on my own. I am bouncing back slowly and gradually!
Today i am sharing a super easy indian style masala pasta recipe for upcoming holidays. This ain't your ordinary pasta. With flavors bursting out from every corner, this one is delicious! To make it more unique and give a distinct flavor, i have used my ever favorite and trusted Ragú Pasta Sauce.
Have you guys heard about Assunta Cantisano, the founder of Ragú? She was an immigrant from Italy, with an amazing entrepreneurial spirit. Assunta came to America during great depression as a single mom, with her trusted family recipe for Tomato Sauce. With her hard work and dedication, Ragú pasta sauce was born. Made with farm grown ingredients, no artificial ingredients and no high fructose corn syrup, Ragú is the one to celebrate traditions. It is crafted with passion and simmered in tradition.

Recipe
Ingredients:
1.5 cups Brown Rice Pasta
1/2 Onion chopped finely
4 garlic cloves minced
1 tsp ginger minced
2 tbsp peanut oil
1 tsp cumin seeds
2 green chilies chopped
Steamed or Boiled Mixed veggies - 1 cup
2 Tomatoes finely chopped
2 tbsp Tomato Ketchup
2 tbsp Ragu Pasta Sauce
1 tsp Turmeric powder
1 tsp Red Chili Powder
1 tsp Chaat Masala
1 tsp Garam Masala Powder
Salt as per taste
Grated cheese- 3 tbsp
Cilantro to garnish
Method:
1. Boil and drain pasta. Heat oil in a sauce pan, add cumin seeds, garlic, ginger, green chilies. Saute for a minute. Add onions, salt, turmeric powder ,chili powder and the steamed veggies. Saute for 3-4 minutes, till onion turns translucent.
Add tomatoes and cook on medium flame for 5 minutes with lid closed.

2. Once tomatoes turn mushy add tomato ketchup, ragu pasta sauce, chaat masala and garam masala. Cook till you can smell the aroma of spices and tomatoes are completely cooked. Toss the drained pasta and coat well in to the sauce. Add cheese and garnish with cilantro leaves.
Notes:
1. You can use any pasta of choice , i like the taste of brown rice pasta compared to others.
2. Veggies i used were carrots, peas and french beans.
