Pizza is our favorite junk food. This one sentence sums it all up. As tasty as it maybe, it definitely is not so great for your waist line. This one is a healthy alternative to the traditional pizza. I first heard about them from a workout program that i had purchased called as the 21 Day Fix(I plan to write about this program in few days). Just like most others, i too was very skeptical on trying them as to tell you the truth, i cannot stand caulifower in any form and will do anything and everything to not eat them. I have tried making the crust with eggs, but it turned very soggy and the eggless ones were better i felt. This isnt exactly like the actual pizza base, but then it's not bad either. If you are someone who is trying to watch their weight but would still like to relish few slices of a pizza, this one's for you.
Start with a whole caulifower. Cut in into half, then four and remove all florets.
Next is preparing the caulifower rice. Pulse the florets in a food processor or a blender till fine. Boil some water in a saucepan, when it comes to a boil, add the caulifower, close the lid and cook for 4-5 minutes. If you have a microwave, you can skip this step and cook the caulifower on high for 4 minutes.
Drain the water and tightly squeeze kitchen towel until there is no water left. Allow it to cool for few minutes in the towel.
Add 1/4th cup parmesan cheese, 1tbsp italian herbs, 1-2 minced garlic cloves, 1 tsp salt, 1 flax egg(1 tbsp flaxmeal + 3 tbsp water) into the now cooled cauliflower and prepare a dough.
Start preheating your oven at 450 F. I took my cast iron skillet, cut parchment paper accordingly, sprayed some olive oil on it and have spread the pizza base on it. Bake for around 20-25 minutes till the crust becomes golden brown. Spread pizza sauce and garnish with toppings you like and bake further for 7-8 minutes till the cheese melts. Mine is a simple and my all time favorite pizza margherita.
